Stuffed Poblano Peppers with Refried Beans

We love to grow poblanos in our garden and we are always trying to think of creative ways to eat this spicy pepper. We don’t like to eat nacho chips with our refried beans so this is another great option, and of course, more nutritious.

Microwave required

4 Medium poblanos

1 can refried beans or *fresh made refried beans* (see recipe post)

homemade salsa (recipe coming soon)

shredded cheese optional

cilantro, sour cream, green onions optional


1 Cut peppers in half, remove seeds, place face up in microwave safe dish for 3 minutes

2 Place refried beans into half pepper, cook for another 2 minutes

3 Sprinkle cheese on top, cook for another minute.

Place sour cream, salsa, green onions, cilantro on top.
