Quite a few people are curious about my food choices. I simply like to say I’m on a food journey. I am neither a cook nor a chef nor a nutritionist. Change was needed in my life.  Tired of fighting and struggling with my weight most of my life, I started researching food, the chemicals used in processed food, and various food preparations.

My husband and I are crazy passionate about our garden. We both felt we ate healthier than most people, but still we struggled with our weight as do most Americans. Most often called the Standard American Diet, or SAD diet, it is a diet high in sugar and protein and very little nutrients. I use to think eating a Lean Cuisine was ‘eating healthy’. Long gone are those days.

Two years ago, I experimented with the Raw Food Diet. I lost 10 pounds within the first month. However, I soon fell off the wagon, as apparently most people do, and I slowly gained the weight back.

Back in September 2011, I revisited the Raw Food Diet again, convincing my husband to give a try. Again, we stayed true to this diet for about 2 months. We bought all the equipment we thought we needed…a dehydrator, a centrifugal juicer, a citrus juicer, a Vitamix Blender….and we juiced, we made smoothies, we dehydrated and we felt great, lost weight, our sugar addiction disappeared and we really felt we were onto something. So what happened?

I think a raw food diet is great. You’re eating food in its most natural form and that’s wonderful. But the raw food diet takes a lot of planning ahead, expensive equipment; and time, a lot of time. And for me, I simply missed the ‘savory‘ aspect of cooking. The tongue can detect sweet, sour, salty and bitter. But the Chinese say we can taste savory, called umami. And I guess I missed umami while eating the raw food diet. So we started cooking again. And we don’t feel guilty about it. Cooking is not a sin. It’s a way of life. That’s why Homo sapiens persevered. Fire!

I no longer follow ‘a diet’. My food choices are a way of life. Every diet out there has rules and regimens.  If you don’t eat meat then you’re a Vegetarian. If you eat 70% raw you are a Raw Foodist.  If you eat meat socially you are a Flexitarian (or a Hypocrite in some vegan circles, oh my!) I do not want a label. I want balance and health.

The following are my truths, for my life.  I am on a food journey. I expect my opinions to be influenced and to change over time. My truths are not written in stone and I will continue to explore new foods and new ideas.

  • Plant-based foods Optimum health is maintained by primarily ingesting alkaline based foods, hence, plant-based foods.
  • Humans are opportunitstic omnivores Humans need meat, but only in very limited quantities.
  • Vegetarianism   Is a choice. I respect that.
  • Vitamin B12   An essential vitamin. The only way to obtain natural B12 is by eating meat or seafood.
  • Refined Grains Pasta, white rice, bread, pretzels, crackers, and chips. Most of these foods contain ‘empty calories’ and are over processed.
  • Fire is good  Heating and cooking some foods are better nutritionally. For example, calcium uptake increases when kale and spinach are cooked. The bioavailability of iron in beans increases with heating.
  • Exercise is important Humans were meant to move, to walk, to run.

So there you have it. My truths. I hope to continue gaining knowledge and wisdom. What I eat makes me feel great and what I eat no longer leaves me feeling hungry.  I no longer count calories, protein, carbohydrates and certainly have no guilt over my food choices.
